Chet Bacon's Volcano Shrimp
  • 2 dozen shelled Gulf or Tiger Shrimp
  • 1/4 cup olive oil
  • juice of 1 fresh-squeezed lemon
  • 2 tbs Louisania style hot sauce
  • 2 tbs Tabasco sauce
  • 1 tbs light soy sauce
  • 1/2 stick of butter, melted
  • 1 tbs oregano
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 1-2 finely diced Habanero peppers OR to taste
  • 12-18 Skewers, water soaked
Combine all ingredients in a glass dish. Marinade for 1-2 hours. At the same time soak your skewers in a dish of water.

Skewer 4 or 5 shrimp together when ready. Broil (BBQ) on a grill for about 3-4 minutes each side depending on the size. Drizzle the rest of the marinade over the top as you cook. Caution - it does flame up on the grill when doing this.

Serve the shrimp with your favorite rice and fresh green pea pods.

We added cubes of marinated sea bass in between the shrimps...real tasty!
