Tex-Mex Meatballs

Brown:

  • 2 lbs ground round
  • 1 tbsp minced chipotle chiles
  • 3/4 cup minced sweet onion
  • 4 cloves crushed garlic
  • 1/2 cup breadcrumbs
  • 1 tbsp coriander
  • 1 tsp cumin
  • 1 egg
Mix, shape into small balls, cook in (Mongolian Fire) oil.

Sauce:

  • 2 minced chipotle chiles
  • minced garlic to taste
  • 1 can crushed tomatoes
  • 1 cup of beef broth (or water).
Heat and add meatballs. Serve over rice or pasta. Simple and easy to fix...
