Tex-Mex Meatballs
Brown:
- 2 lbs ground round
- 1 tbsp minced chipotle chiles
- 3/4 cup minced sweet onion
- 4 cloves crushed garlic
- 1/2 cup breadcrumbs
- 1 tbsp coriander
- 1 tsp cumin
- 1 egg
Mix, shape into small balls, cook in (Mongolian Fire) oil.
Sauce:
- 2 minced chipotle chiles
- minced garlic to taste
- 1 can crushed tomatoes
- 1 cup of beef broth (or water).
Heat and add meatballs. Serve over rice or pasta. Simple and easy to fix...
