Satay Udang (Dancing Prawns)-thanx to Judy Howle...
  • 4 serrano red chilies, seeded and sliced (or 2 red savina habaneros)
  • 4 tablespoons cilantro roots
  • 1 3/4 teaspoons paprika
  • 3 garlic cloves, peeled and minced
  • 2 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 3 tablespoons lemon juice
  • 2 tablespoons Indonesian soy sauce
  • 3 tablespoons corn oil
  • 2 pounds jumbo shrimp (about 32)
In food processor, blend chilies, cilantro, paprika, garlic, brown sugar, fish sauce, lemon juice and Indonesian soy sauce. Process until mixture forms a paste. Transfer to a bowl and stir in oil. Let shrimp marinate in paste 15 minutes.

Grill or sear the shrimp for 2 minutes on each side or until they turn pink. Place each shrimp on a 6-inch skewer and serve.
