Grilled Quesadilla Stacks
- 2 or 3 hot sausages, your choice, removed from casings and chopped
- 1/2 minced yellow onion
- 3 minced garlic cloves
- 1 tbsp Northwest Fire (or chili powder)
- 1 tsp Red Savina smoked pepper flakes (or what have you...)
- 1 cup grated Jack cheese
- 1 cup grated cheddar cheese
- 2 large fresh jalapenos, cut into thin slices
- 6 white corn tortillas
In a skillet, cook the sausage over medium-high heat, stirring, until browned and the fat is rendered, about 4 minutes. Add the onions, garlic, Fire, and pepper flakes, and cook, stirring, until the onions are soft, 3 to 4 minutes. Remove from the heat and let cool.
Top each tortilla with about 1/4 cup of the sausage mixture, some cheese and as many jalapeno slices as you feel comfortable with and top with another tortilla. Press down and add another layer of sausage, cheese, and jalapenos, finishing with 1 more tortilla.
Lightly oil the grill or griddle and cook the stacks for about 3 minutes per side, or until the tortillas are golden brown and the cheese is melted. Cut each into 4 pieces.
