Crab & Shrimp Stuffed Manicotti
  • 4 oz bacon, chopped
  • 1/4 cup minced Maui or other sweet onion
  • 1 tbsp minced garlic
  • 1 tsp minced fresh ginger
  • 6 oz small shrimp
  • 1 pound crabmeat
  • 4 oz Maytag Blue cheese
  • 2 oz Monterey Jack, grated
  • 2 tbsp soy sauce
  • 1/2 tsp hot pepper sauce
  • 1/4 cup chopped green onions
  • 1 tbsp minced fresh basil
  • 1 package Manicotti
  • Marinara sauce
In a small skillet, cook the bacon over medium heat until browned and crispy. Add the onions, garlic, and ginger and cook, stirring, until soft, about 1 minute. Add the shrimp, stir, and remove from the heat.

In a bowl, combine the cooked onion mixture, blue cheese, soy sauce, hot sauce, green onions, and basil, and blend together. Add the Monterey Jack and mix well. Fold in the crab meat.

Stuff the manicotti with mixture and pour marinara sauce over manicotti in baking dish, cover and let sit for 2 hours. Bake at 300 degrees for an hour or so...
