Chipotle Sauce
  • 1 Tbsp corn oil
  • 3/4 cup chopped roasted red peppers
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped carrots
  • 2 garlic cloves
  • 1 cup beef broth
  • 1/2 cup apple juice
  • 3 Tbsp whipping cream
  • 4 or 5 chipotle peppers
Heat corn oil in heavy medium saucepan (on medium high). Add peppers, onion, carrot and garlic. Saute until onions are translucent. Add beef stock and apple juice, simmer uncovered 15 minutes on medium heat. Add cream and chipotle chiles, simmer 5 minutes.

Transfer to blender and puree until smooth. Strain and serve over your favorite dish (thinly sliced BBQed flank steak comes to mind...)
