Chipotle Cheese Meat Loaf (Marion Cunningham gone gonzo...)
Great with baked potato. The second day, it's sandwich time!
- 2 cups freshly made bread crumbs (I used Roman Meal, zapped 5 slices in a food processor and slightly dried)
- 1 1/2 pounds ground beef
- 1/4 lb gound buffalo
- 1 1/2 tsp Wasabi powder
- 1 1/2 tsp Hot Mustard Powder
- 1 sweet onion, chopped fine
- 2 lg pinches sea salt
- 2 eggs
- 2 cups coarsely grated cheese (I used provolone)
- 2 seeded Chipotle peppers
- 2 tbsp Adobo Sauce
- 1/4 cup milk
Preheat the oven to 350°F. Butter a loaf pan (or use 2 small loaf pans). Combine all the ingredients in a large bowl. Add milk last and use only as much as needed...) Pat into the loaf pan, drizzle on top a little of your favorite hot sauce (I used Judicial Flavors' Shyster BQ Sauce) and bake for 50 minutes. Drain, slice and serve.
